Mussel Soup best paired with Crispy Fried Maya-Maya

Ingredients :

1 big can of fresh mussels
1 medium size ginger - julienned
3-4 cloves of garlic minced
1 onion, diced
1 medium size onion chopped
1 tsp. of cooking oil
5 cups of water though I prefer using Sprite or 7 up
salt and pepper to taste

Procedure:

Wash mussels under running water thoroughly and remove the hairy thing :D

Heat a large pot. Add oil. Saute ginger, garlic and onion until brown. Stir for a while. Pour in the water or sprite. Bring to a full boil. Add cleaned mussels to the boiling water or sprite. When water is boiling again, lower heat. Season with salt and pepper. Stir. Cover and simmer for 5 minutes. Do not overcook the mussels. Serve hot.

Jollibee take out to the rescue!

Thank heavens for take out foods! Especially when your family are already starving and unfortunately you don't have time to prepare even a simple meal.. all you have to do is dial their delivery service or better yet.. drive thru option! :D And just wait for the delivery guy to arrive with your hot and freshly cooked combo meals and while waiting, you can also log online and search for some stuff like funky mbt shoes and the likes! see!? multi-tasking! :D

pandan flavoured PICHI PICHI

INGREDIENTS
1. 1 – 1/2 cups grated cassava
2. food coloring -green (optional)
3. 1 cup sugar

4. 1 bundle of pandan leaves, boiled in 2 cups water until reduced to one cup, and cooled ( or canned pandan concentrate, or a few drops of pandan essence in a cup of warm water)

5. 1/2 tsp lihiya water

6. grated coconut for topping

PROCEURE
1. Mix the sugar and the pandan flavored water and mix until sugar is dissolved. mix in the cassava and then add the lye water drop by drop mixing well as you do so

Pour into a mold or bowl that fits your bamboo steamer. steam until the mixture becomes translucent.
3.
While still hot scoop out the cooked mixture (use ice cream scoop or a tablespoon the same size as the scoop) and roll into grated coconut.

Sinampalukang Manok

INGREDIENTS
2 tbsp. cooking oil
3-5 cloves garlic, minced
1 large onion, sliced
1 med. size ginger, sliced
1 chicken, cut into serving pieces
salt and pepper
3 cups water
1 pack tamarind soup base
1 string sitaw
3 pcs green sili (sili'ng pang paksiw)
optional: eggplant, bell pepper

PROCEDURE
1) Saute ginger then add garlic in cooking oil until golden brown, add the onion
2) Add the chicken, stir fry and season salt and bit of pepper (broth cubes optional)
3) When the chicken is almost brown add water and bring to a boil
4) Simmer for almost 10-15 minutes
5
) add the tamarind soup base, bring to a boil for another 2-3mins
5) Add the sili and sitaw then turn off the heat

**Serve hot with rice

It has been more than a week now since I started craving for cakes and pastries. Though actually, having a real deal sweet tooth, cakes is always part of my sweet cravings. But the last time I went to the bakeshop, I saw this Chocolate Heaven by Red Ribbon and promised myself to indulge into this the next time I drop. So last Sunday, after attending the mass, the husband dutifully drive and brought us to the bakeshop and bought me this really sinful chocolate treat! A very delightful cake treat, second to a Branson vacation package if you will ask me! - well, the moment I took a bite at this, I literally went ecstatic and told the husband that this is indeed very good... he believed me, though he made me choose whether I'll still choose it over a fab and luxurious vacation like what the Branson vacation is offering.. so there! :D

blurb on schooling again...

One of the things I am thinking of getting myself into is to enroll in one of those online schools that offers of course, online degrees. Been hearing so much good stuff about it and I thought of why not experience the wave too, you know. I mean, getting another degree is such a good thing and I believe it'll be beneficial for our future also especially when I decided to work again in the corporate world. Having two degrees can be an additional plus to my credentials right!? So there, will be checking out sites that offers affordable online degree offering the soonest :D

Red Ribbon's Ube Macapuno Cake Roll

Having a sweet tooth, one of my favorite food to eat is cake. Whatever kind of cake, not really choosy when it comes to that actually. As long as it tastes good and very much delectable, it's a sure win!
Anyways, the other night after our bi-weekly grocery shopping, we happen to pass by Red Ribbon's bakeshop and this yummy Ube-Macapuno cake suddenly made me salivate! I had to rush inside and came out with a half roll of that yummy thing - to my husband's surprise! So what I did the moment we reached home (after I arrange our grocery loots on our cupboards and tidy up a bit our abode) I immediately cut a slice and had it photographed first- well of course, for blogging purposes!
To which made me suddenly thought of having my food shots be printed, there are tons already and it'll sure look good on an album! Now if only my printer have an ink, I'll print those immediately, better check out those affordable 108r00727 and ink cartridges online so I'd be able to make that prospective project happen then!

Aside from cooking and eating, one of the things that the husband love is doing outdoor stuff like hunting, shooting and even biking! The latter is actually his latest craze and was just recently convinced by another outdoor-kind-of-friend and was able to made him get his own bike. And guess what, as expected he'll be buying so many gadgets, parts and stuff too like those yakima racks which he can put on to our car so he'll be able to bring along his bike wherever, whenever. Which made me wonder, maybe I can try that sport too and who knows, it might be the way for me to lose my extra pounds! :D
