Chicken Tinola

Another Filipino dish I know everyone loves :)

Ingredients:

  • 1/2 kilo chicken
  • 6-8 cloves garlic (crushed)
  • cooking oil
  • ginger strips (around 20 1/4 inch thick by 1 inch long)
  • 1 medium sized onion (chopped)
  • patis
  • 1 cup green papaya (or more,depends if you like it)
  • handful of sili leaves
  • water
  • pepper (if you prefer)

Procedure:
  • In a pan, saute ginger, followed by garlic (until brown), then add the onions in cooking oil.
  • When the first three ingredients are done, add in the washed and cleaned chicken and stir fry for about 1o minutes (you Sangkutsa the chicken with the first three ingredients for a while to let the lansa out)
  • Add in the patis, about 5 tbsp, after stirring a bit, you can now add the water until the chicken is fully covered (add more patis, until you reach the desired salty taste) let it simmer, after which you can now add the papaya, cover and again let it simmer in a medium heat.
  • When the papaya is tender, add on now the sili leaves, let it boil for another 2 or 3 minutes, season with pepper if desired.
  • Serve hot with rice :)
